I've just finished installing Matlab on a MacBook Pro with retina display, and the text looks very good - it's much sharper than on a non-retina display. It looks like Matlab is indeed using Apple's text rendering.
On the other hand, some of the icons (e.g. the custom icons in the title bars of the windows) are lower-resolution, but that's a minor quibble. I imagine anything graphical will look a little chunky compared to the text. For example, I just tried a sine plot, and it looks about the same as on a non-retina display.
